Sugar/Egg/ Gluten-Free Chia Cookies

Sugar/Egg/Gluten-free Chia Sugar Cookies

Makes 20 cookies

Prep time: 25 minutes

  • ¼ cup ground flaxseed
  • ¼ cup ground chia seed
  • ½ cup coconut flour
  • ½ tsp. baking powder
  • ¼ tsp. salt
  • ¾ cup erythritol
  • ¼ tsp. stevia powder
  • ½ plus 2 Tbs. cup vegan butter, softened
  • 1 tsp. vanilla extract
  • ½ tsp. almond extract
  • extra coconut flour for dusting
  1. Combine all ingredients, except extra coconut flour, in a food processor and process on high until ingredients form into dough.
  2. Lightly dust a counter and a rolling pin with extra coconut flour. Roll out dough to ¼ inch thickness and cut with a 2” wide cookie cutter or with the mouth of a glass.
  3. Place cutouts on an ungreased cookie set and bake in a preheated oven at 350 degrees for 8-10 minutes until a light brown. Remove cookies from sheet and let cool.
